Kombucha, the Indian Ocean drink to fight viruses

Old healthy preparation to strengthen immune defences

In Kenya and generally throughout the Indian Ocean, people have always been drinking Kombucha to drive out viruses.
Beyond the uncertain origins of this drink, one thing is certain: kombucha has always been considered an elixir of life.
One of the many stories tells that a Korean doctor named Kombu used this marvellous infusion in 415 A.D. to cure the Japanese Emperor's digestive problems, hence its etymological origin.
Its beneficial and detoxifying qualities are dogmas of traditional Chinese medicine, which already speaks of its first use in 2000 BC.
It is a fermented drink based on tea or other infusions, a probiotic food, as all fermented products are considered, that is, able to enrich our intestinal flora and its community of microbes.
It is considered by many to be the panacea for all ills, from asthma to high blood pressure but, leaving aside popular myths and rumours, the main benefit of the drink is that it contributes to the functioning of the intestinal flora, as well as being a natural source of energy and rich in vitamin B, C and antioxidants. It is an excellent ally in the purification of the liver and blood and ideal for strengthening the immune system.
Kombucha is obtained from the symbiosis between micro organisms, acetic acid and yeast which allows the start of a fermentation process during which the gelatinous mass called SCOBY (Symbiotic Colony of Bacteria and Yeas) is created. This can then be used for another preparation, a bit like the mother yeast.
The realization of this drink, with a slightly acidulous and sparkling taste, is then made by mixing green tea or sweetened black tea with scoby, waiting about two weeks.
In addition to being spread all over the world, it is now easy to find and buy the kit online to prepare it at home.
There are now numerous clubs and "brands" offering and recommending different lines of kombucha with exotic and original flavours that try to appeal to all palates, for example ginger or raspberries and other fruits.
Also in Malindi, in the Shella district just a few metres from the Old Court there is a place where you can enjoy this delicious natural drink with surprising beneficial properties.
