Cold avocado velouté, taste and health

Ideal recipe for hot Kenyan days

Here is an all-flavour and wellness avocado recipe for a classic hot day at the equator in Kenya.
Not only does the avocado go well with other foods and spices, it also has important health benefits.
In fact, avocados are rich in healthy fats, which the body needs to increase energy, protect organs, produce hormones and aid nutrient absorption.

It also contains potassium and magnesium, so the avocado keeps blood flow and blood pressure under control, helping to regulate it, which is essential for the prevention of heart disease.

It is also rich in vitamins, fibre and carotenoid compounds, which are beneficial antioxidants that can protect against disease and strengthen the immune system.

The strong antioxidant effect protects against the progression of many chronic diseases such as diabetes and stroke risks.
In Kenya, the best avocados are the small, ridged-skinned ones from the Nyeri area or the round ones from Mount Elgon.

Ingredients

1 ripe avocado, cut into cubes

1 tablespoon fresh lemon juice

1 cup plain Greek yoghurt

1 teaspoon chopped fresh garlic

1 teaspoon salt

¼ teaspoon freshly ground pepper

¼ teaspoon ground cumin

? teaspoon cayenne pepper (optional)

½ cup mineral water
¼ cup coarsely chopped fresh coriander (or basil, if desired)

Preparation

Add water to a food processor and add all the ingredients (with a blender add later, in two stages).
Process until smooth.

Check the consistency and refrigerate for 30-40 minutes before serving.

Garnish with coriander or basil and serve while still cold.
